A Grail?!
The Wine World, like our Cosmos, is governed by natural laws or systems of natural laws. A Unified Theory that could connect all the dots between those systems has been the Holy Grail of our ‘Knights of The Wine Fable’ team’s quest through the Wine World. As is often the case with such mysteries, the answer lies in plain sight but in order to unlock their content one has to find the proper key.
Terroir is where we went looking for it.
Terroir
The concept of Terroir has been around for ages. It is largely considered as a measure of a wine’s conductivity of the environmental traits of the place in which it is produced and it is that but it’s not just that. Apart from the traits of Climate, Soil and Geomorphology that the Terroir System incorporates, there is a less acknowledged one that has the capacity to radically transform the whole equation and turn this science of place into a theory of all things wine.
That trait, that key is Man.
Man
Through Story, Culture and Technology, Man is the Architect, Orchestrator and Engineer of all the natural elements that constitute wine. That concept is there, not to rob the place out of wine, but to assign terroir to humans as well ! Another kind of a ‘sense of place’ strangely named Culture…
A Theory of Everything Wine
Our theory is that the fabric of Wine Spacetime warps under the cosmic force of Cultural Gravity and it is represented by the following equation:
Terroir = Place * Man2 / Wine
Our T.P.S. (Terroir Positioning System) mechanism has been built on that very principle as a vessel of terroir exploration. It inputs 3 types of coordinates under the titles: ‘the story’, ‘the place’ and ‘the wine’ through which all terroir traits are represented and interfaces them to create a holistic experience of terroir.

The Story
“Kouloura” is an extremity of vine-training customization.
Special terroir conditions call for purpose-built solutions and in a case as unique as that of Santorini, nothing short of exotic should be expected.
Whereas most vineyards in the world are driven upwards, aiming for a better exposure to sunlight and wind in order to obtain a better hygiene as well as the desirable ripening conditions, those of Santorini have an excess of both. That excess is one of a magnitude that rather requires hindering than harnessing.
What “kouloura” actually does, is that it forms a vegetative fortification around the vine’s core, protecting it against overexposure to sunlight and wind, sheltering the inner vegetation and farming humidity.
Training the vines in the form of “kouloura” is a time-consuming, costly and hard labor as well as an art form but most importantly, it is one of the most apparent indications of the symbiosis between vine and man that precedes wine.
